Aged for at least 24 months, it develops intense, complex flavours. Many describe the taste as nutty, sweet, grassy, creamy and fruity.
Crozier blue has a rich, full well rounded flavour, it is saltier and richer than Cashel, but similar to Cashel the blue has little sting or harshness about it.
Bleu d’Auvergne is very flavourful but not overpowerful.

Gorgonzola Picante is a very robust strong tasting cheese. It can also have a spicy taste to it. An indicator of the strength of the cheese is the paste of the interior, the darker it is the stronger it will taste.
Bellingham Blue has a very strong flavour with a salty finish.
