Description
This semi-hard blue cheese is made by Peter and Anita Thomas in Co. Louth. They started production in 2000, using milk from the cows on Anita’s family farm near Castlebellingham. Lovely and salty, with a strong flavour, this is a pure pleasure if you a fancy a pear and blue cheese salad with a crisp glass of Sauvignon Blanc. Also works well melted into your pasta sauce.

Bellingham Blue is a great option for the cheeseboard, or on its own with crackers or bread.
