Here are some simple marinades that will see you through the Summer and beyond. Perfect for barbecues.

Ingredients

Citrus

  • 1 tbsp SuperValu Fresh Mint chopped
  • 1 - SuperValu Green Chilli finely diced
  • 1 - SuperValu Lemon grated zest and juice
  • 1 - SuperValu Lime grated zest and juice
  • 2 tbsp SuperValu Olive Oil
  • 1 - SuperValu Orange grated zest and juice

Curried

  • 1 tbsp Curry Powder
  • 1 - Fresh SuperValu Mixed Chilli finely diced
  • 3 tbsp Natural Yogurt
  • 1 tbsp SuperValu Fresh Coriander chopped
  • 2 cloves SuperValu Garlic finely diced

Garlic and Rosemary

  • 2 sprigs SuperValu Fresh Rosemary
  • 4 cloves SuperValu Garlic peeled
  • 3 tbsp SuperValu Olive Oil
  • 3 - SuperValu Whole Black Peppercorns

Sage and Balsamic

  • 2 tbsp Balsamic Vinegar
  • 1 tbsp SuperValu Fresh Sage chopped
  • 2 cloves SuperValu Garlic chopped finely
  • 1 tbsp SuperValu Olive Oil
  • 0 - SuperValu Whole Black Peppercorns

Summer Herb

  • 2 tbsp SuperValu Fresh Parsley Flat Leaf chopped
  • 0 - SuperValu Lemon juiced
  • 3 tbsp SuperValu Olive Oil
  • 3 stem SuperValu Scallions sliced finely

Method

As all of these are mild marinades, allow to marinate with the meat or fish for at least an hour and ideally overnight if time allows.

Summer Herb

for Fish, Chicken, Lamb and Pork
  1. Simply mix all ingredients together.

Garlic and Rosemary

for Pork, Beef, Lamb and Chicken
  1. Place all the ingredients into a mini food blender and blitz until a coarse puree is achieved.

Sage and Balsamic

for Beef, Pork and Chicken
  1. Simply mix all ingredients together.
