Gyros Gyros

This Gyros recipe is perfect for sunny evening entertaining.

  • 1 - Chillis fresh, deseeded.
  • 1 handfull Coriander fresh, chopped
  • 1 - Cucumber sliced into ribbons
  • 1 bunch Scallions
  • 1 - SuperValu Hummus dollop
  • 1 pack Wholemeal Pitta Breads or flatbread
  • 1 - pork belly Prepared by the Butcher

Satay sauce:

  • 165 ml Coconut Milk
  • 1 tbsp Curry Powder
  • 1 tsp Honey
  • 0.5 - Lime juice only
  • 3 tbsp Smooth Peanut Butter
  • 1 tbsp Soy Sauce


Cook the pork belly according to instructions.

For the satay, add the lime juice, honey, soy sauce, curry powder, smooth peanut butter and coconut milk to a food processor and blitz.

For the gyros, start by lathering the inside pita with a layer of hummus. Then stuff with the cucumber ribbons, chopped up scallions and pieces of pork belly sliced off the bone.

Add a dollop of satay sauce and garnish with fresh chillis and coriander. Serve on a big platter with fresh fruit as the ultimate grab and go lunch
