  • 30 g Capers
  • 1 stick Celery
  • 2 cloves Garlic finely chopped
  • 0.5 - Red Onion half of it finely chopped
  • 1 - Red Pepper chopped into squares
  • 1 - SuperValu Carrot finely chopped
  • 2 - SuperValu Fresh Irish Chicken Breasts
  • 2 sprigs SuperValu Fresh Rosemary
  • 20 g SuperValu Parsley finely chopped
  • 100 g SuperValu Pitted Green & Black Olives roughly chopped
  • 1 portion SuperValu Signature Tastes Extra Virgin Olive Oil
  • 150 g SuperValu Signature Tastes Rustica Passata
  • 0.5 - Water Half a glass of water if necessary


1. Add the SuperValu Signature Tastes Extra Virgin Olive Oil to the bottom of the pan. Once hot, add the chopped celery, carrot and onion.

2. Let the vegetables get a bit of colour and then add the garlic, olives, capers and peppers and stir so that the oil is coating all the ingredients.

3. Add the chicken breasts and cook over a medium heat until both sides of the chicken are seared. Add the passata and turn the heat to low and let the chicken breasts cook thoroughly. If the sauce gets a little too dry add the water and stir.

4. Once the chicken is cooked, spoon the sauce on a plate and place the chicken on top. Sprinkle with the finely chopped parsley and rosemary. Serve straightaway.
