This delicious mexican chicken recipe is bursting with flavour and so simple to prepare.

  • 1 - Black Pepper
  • 800 g Chopped Tomatoes
  • 1 tbsp Ground Coriander
  • 1 - Salt
  • 1 - SuperValu Green Chilli fresh, deseeded and chopped
  • 8 - SuperValu Quality Irish Chicken Thighs diced
  • 2 tbsp Taco Seasoning

To serve

  • 0.5 head Iceberg lettuce shredded
  • 50 ml Sour Cream
  • 8 - SuperValu Tortilla Wraps


Put the chicken, tomatoes, chilli, spices and some salt and pepper in your slow cooker and stir to coat. Cover with the lid and cook on high for 2 hours or cook on low for 5 to 6 hours. Remove the chicken and shred with two forks, then put it back into the slow cooker and mix together. Check the seasoning.

Serve the chicken in tortilla wraps with shredded iceberg lettuce and a dollop of sour cream.
