Give it as a gift by pouring it into a little jar and covering it with olive oil to stop it discolouring.

Ingredients

  • 80 g Basil Leaves
  • 2 - Garlic Cloves finely grated
  • 50 g Pine Nuts
  • 1 tsp Salt
  • 150 ml SuperValu Extra Virgin Olive Oil
  • 50 g SuperValu Parmesan Cheese Shavings

Method

  1. Preheat oven to 180°C. Prepare a rimmed baking tray with parchment paper.
  2. Toast your pine nuts for 5-7 minutes until golden brown, tossing once halfway through. Let cool.
  3. Pulse the cooled pine nuts, grated parmesan and garlic in a food processor until fi nely ground.
  4. Add the basil leaves. Gradually blend in the olive oil until the pesto is mostly smooth. Season with salt to taste and enjoy.
