Method
Cook the pasta according to the instructions on the pack.
Prepare the sauce: In a sauté pan over medium / high heat, warm the oil and add the bacon pieces. Cook for 2-3 minutes.
Add the shallots and garlic and cook for a further two minutes to soften the shallots.
Stir in the tomato pesto and chilli flakes and cook for a minute, stirring well.
Pour over the vodka and when it has evaporated, add in the cream.
Simmer for a further minute or so until the sauce is combined and smooth. Keep warm until the pasta is cooked.
Drain the pasta, keeping about 100ml-125ml of pasta cooking water, then stir the pasta water into the creamy vodka tomato sauce, a little at a time. Stir in the butter for a glossy finish.
Add the linguine and grated parmesan and stir to coat the pasta in the sauce.
Divide into two pasta bowls and sprinkle extra pepper, parmesan and some fresh basil if desired. Enjoy piping hot!
