Ingredients

For the main

  • 1 - Black Pepper
  • 400 ml Coconut Milk
  • 1 tbsp Fish Sauce
  • 2 cloves Garlic peeled and chopped
  • 1 - Lime zest
  • 1 - Onion finely chopped
  • 1 tbsp Rapeseed Oil or olive oil
  • 1 - Red Chilli sliced
  • 1 - Salt
  • 1 tbsp Sugar
  • 1 - SuperValu Quality Irish Pork Steak
  • 1 tbsp Thai Green Curry Paste

For the spicy cucumber salad

  • 2 - Cucumber seeds removed and sliced
  • 1 tbsp Fish Sauce or soy sauce
  • 1 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • 1 - Red Chilli sliced
  • 3 - Shallots sliced
  • 1 tbsp Sugar

To garnish

  • 1 handfull Beansprouts
  • 1 - Lime cut into wedges
  • 1 - Red Onion chopped
  • 1 handfull SuperValu Fresh Basil roughly torn
  • 1 handfull SuperValu Fresh Coriander roughly torn
  • 3 - SuperValu Scallions sliced

Method

  1. Heat the oil in a large pan over a medium heat. Sauté the onion for about five minutes until softened. 
  2. Stir in the curry paste and cook for a moment or two. Add the coconut milk and simmer for 2 - 3 minutes. Season the pork with salt and black pepper and add it to the pan along with all the remaining ingredients. 
  3. Stir well, cover and simmer gently for 5 - 7 minutes until the pork is cooked. The amount of time depends on how thin the strips of pork are. 
  4. To make the Spicy Cucumber salad: mix the cucumber with all the other ingredients. 
  5. To serve: Divide the curry between four plates or bowls and garnish with the lime, beansprouts, basil, coriander, scallions and red onion. Serve with the Spicy Cucumber Salad and rice.
