Ingredients

For the Festive Cranberry & Herb Hummus

  • 400 g Chickpeas
  • 15 g Coriander
  • 80 g Cranberries fresh
  • 1 clove Garlic
  • 2 tbsp Lemon Juice
  • 3 tbsp Olive Oil
  • 1 tsp Salt
  • 3 tbsp Signature Tastes Maple Syrup
  • 3 tbsp Tahini

For the Guacamole Hummus

  • 1 large Avocado
  • 10 small Cherry Tomatoes cut in quarters to serve
  • 400 g Chickpeas
  • 0.5 tsp Chilli Powder
  • 15 g Coriander
  • 2 cloves Garlic
  • 1 tsp Ground Cumin
  • 4 tbsp Lemon Juice
  • 3 tbsp Olive Oil
  • 2 tsp Salt
  • 50 ml Water

For the Roasted Red Pepper & Peanut Hummus

  • 400 g Chickpeas
  • 1 clove Garlic
  • 2 tbsp Lemon Juice
  • 3 tbsp Olive Oil
  • 80 g Roasted Red Peppers
  • 0.25 tsp Salt
  • 1 pinch Smoked Paprika to garnish
  • 3 tbsp Smooth Peanut Butter
  • 50 ml Water

Method

Drain and rinse the tinned chickpeas, chop the garlic. Pick herbs from the stalk. (De-stone and scoop avocado from the skin if making the guacamole hummus). Drain the roasted red peppers from the brine.
Add all the ingredients to a blender or food processor or use a stick blender and blitz to your desired consistency (add more liquid or oil if needed, or beans if the mix is too thin) and all the ingredients are incorporated together.
Taste and check the seasoning for salt, ground black pepper and lemon juice, serve with the suggested garnish and enjoy!
