Ingredients

  • 1 medium Carrots , halved
  • 1 medium Garlic Cloves , crushed
  • 1 medium Onion , peeled and studded with 3 cloves
  • 2.7 kg SuperValu Signature Tastes Irish Hampshire Ham Fillet
  • 2 sprig Thyme
  • 1 sprig rosemary

For the glaze:

  • 3 tbsp Honey
  • 3 tbsp Wholegrain Mustard

Method

  1. Place the ham in a large heavy-based saucepan. Add the onion, carrot, garlic, thyme and rosemary.
  2. Cover the ham with cold water and bring to a boil, then reduce the heat and allow to simmer or a minimum of 1 hour and 45 minutes (about 20 to 25 minutes per 500g).Remove from the heat and allow the ham to cool in its cooking liquid for 1 hour.
  3. Meanwhile, make the glaze by combining the mustard and honey in a small bowl. Preheat the oven to 160˚C.
  4. Remove the ham from the cooking liquid. Using a sharp knife, remove the skin from the ham, then score the fat in a criss-cross pattern.
  5. Spread the glaze over the top of the ham with a spoon. Place the ham on a tray and roast for 15 to 20 minutes, until the glaze is golden brown.
  6. Remove from the oven and loosely cover in foil, allow to rest for 20 minutes before carving. Serve warm.
