Ingredients

  • 1 - Cucumber
  • 1 tsp Red Wine Vinegar
  • 1 bag Rocket
  • 1 bag Rosie and Jim Shredded Chicken
  • 1 tbsp Sesame Oil
  • 1 tbsp Soy Sauce
  • 1 - Sriracha Sauce
  • 1 - Sweet Potatoes
  • 1 tbsp Tahini
  • 1 - Tomatoes

Method

Method/ Directions 

Step 1: Wash and dry all the vegetables thoroughly. 

Step 2: Chop the rocket, tomato, and cucumber into bite-sized pieces. Place them into a large salad bowl. 

Step 3: Prepare the Sweet Potato and Shredded Chicken as per the instructions on the package. Once ready, allow them to cool slightly before adding it to the salad bowl. 

Step 4: In a separate small bowl, combine the tahini, toasted sesame oil, soy sauce or tamari, red wine vinegar, and a squeeze of hot sauce (e.g., Sriracha). Adjust the amount of hot sauce based on your preference for spiciness. 

Step 5: Whisk the dressing ingredients together until smooth and well combined. Taste and season with salt and pepper if needed. 

Step 6: Pour the tahini dressing over the salad in the large bowl and toss everything together to ensure an even coating. 

Step 7: Serve immediately and enjoy your fresh and healthy salad!
