Everyone can make their own fajitas just the way they want them.

  • 3 cloves Garlic finely sliced
  • 1 - Onion finely sliced
  • 0.5 - Red Chilli deseeded and finely sliced
  • 1 - Red Pepper finely sliced
  • 1 - SuperValu Carrot grated
  • 1 bunch SuperValu Fresh Coriander finely chopped
  • 1 head SuperValu Iceberg Lettuce (or 2 heads of baby gem lettuce) shredded
  • 2 - SuperValu Limes cut into wedges
  • 2 tbsp SuperValu Oil
  • 160 g SuperValu Signature Tastes Irish Mushroom Medley (or any type of mushroom) roughly chopped
  • 1 tin SuperValu Sweetcorn 326g drained and rinsed
  • 1 pack Wholemeal Wrap or tortillas
  • 1 - Yellow Pepper finely sliced


1. Add the oil to a wok or large pan set on a high heat and heat up for 1 minute. Add the onion and fry for 3 minutes, stirring regularly. Add the garlic and chilli and cook for 2 minutes, continuing to stir. Add the peppers and mushrooms and cook for 5 minutes, stirring regularly. Transfer to a serving bowl.

2. Put the grated carrot, sweetcorn, shredded lettuce, fresh coriander and lime wedges in separate bowls.

3. Put the wraps or tortillas on the table along with all the bowls and any of the optional extras. Now comes the fun bit where everyone puts together their fajitas the way they like!
