The punchy flavours of the horseradish mayo might be too strong for kids, so feel free to use plain mayo and leave out the horseradish altogether.

Method
Place the mayo in a bowl and add 1 tablespoon of the prepared horseradish to start with along with some salt and pepper. Mix together until evenly combined, then taste and add more horseradish if you like (or leave it out altogether if your kids won't like it).
Spread all eight slices of the bread with a thin layer of the horseradish mayo. Divide the sliced roast beef between four slices of the bread, then top with one or two tomato slices and a butterhead lettuce leaf. Top with the remaining slices of bread and cut in half on the diagonal, then pack into an airtight container or ziplock bag for lunch.
Pack the sanwiches with fresh fruit, such as a sliced apple, a peeled and segmented clementine, a small banana or a handful of grapes, a yogurt pot for the dairy element of the lunch and a bottle of cold water or unsweetened fruit juice.
