This is a real crowd-pleaser for all ages and can be served hot or cold. It's ideal to prepare ahead of time and pop in the fridge until you are ready.

Ingredients

  • 1 handfull Cherry Tomatoes
  • 1 handfull Fresh Rocket to serve
  • 1 pot Parmesan Cheese to serve
  • 400 g Penne Pasta
  • 150 g Pesto

Method

  1. In a large pot, boil the pasta according to the packet instructions.
  2. Drain the pasta, then mix in a good serving of the green pesto, to your own taste.
  3. Quarter the cherry tomatoes and add them to the pasta with the rocket.
  4. Mix everything together and finish off with a good grating of cheese
