This dish serves 2 people as a starter or makes 8 to 10 canape size bruschettas.

1pinchCaster Sugar
1cloveGarlic

1 - Lemon
zest and juice of half only
1tbspOlive Oil

1portionSuperValu Feta Cheese
crumbled
1 - SuperValu Fresh Demi Baguette
or ciabatta, sliced
1portionSuperValu Fresh Dill
chopped
100gSuperValu Fresh Peas
Method
Cook the peas for 3 to 4 minutes in boiling salted water, then drain and rinse under cold water.
Toast the bread on a hot, dry griddle pan, making nice crispy markings. Rub the halved garlic clove over the dry bread.
Tip the peas into a bowl and roughly mash with the lemon zest, a small squeeze of lemon juice and the olive oil. Add some chopped fresh dill and season with salt and pepper and a little sugar, which will really bring out the sweetness in the peas. Taste and adjust the seasoning as necessary, including a little extra lemon juice if needed.
Top the toasted bread with the mashed peas. Sprinkle with some crumbled feta and garnish with a sprig of dill.
