This is a fantastic vegetarian option, if you wish you could add some cooked chicken, prosciutto or cheeses to this salad.

Ingredients
30 - Balsamic Vinegar
10 - Cherry Tomatoes
halved
1 - Green Pepper
thinly sliced
1 - Red Pepper
thinly sliced
1 - SuperValu Courgette
sliced into ribbons
1bunchSuperValu Fresh Basil
1bunchSuperValu Fresh Parsley Flat Leaf
2clovesSuperValu Garlic
crushed
75 - SuperValu Olive Oil
0 - SuperValu Salt

Method
Cook the Pasta as per pack instructions in some lightly salted water, drain and place into a large serving bowl.
In the meantime, add some oil to a large pan and add the peppers, garlic and courgette, toss in the pan for 2 – 3 minutes then pour in the balsamic vinegar to deglaze the pan.
Cook for a further minute then remove then contents of the pan to the pasta and combine.
Add the chopped olives, cherry tomatos and fresh herbs, then drizzle with some olive oil.
