Light Scrambled Eggs with Sautéed Pepper and Red Onion

  • 0 - Black Pepper
  • 50 g Cheddar Cheese grated
  • 2 - Fresh Egg
  • 4 - Fresh Egg whites only
  • 2 tsp Olive Oil
  • 0.5 - Red Onion diced
  • 0.5 - Red Pepper diced
  • 0 - Salt
  • 4 tbsp Skimmed Milk
  • 0 - SuperValu Fresh Chives to garnish


  1. Heat the oil in a frying pan over a medium heat. Sauté the pepper and onion for 2 to 3 minutes, until softened, stirring occasionally. Season with salt and pepper.
  2. Meanwhile, combine the eggs, egg whites, cheese and skimmed milk in a bowl. Pour the egg mixture into the pan with the pepper and onion and reduce the heat to low. Stir constantly with a wooden spoon to create the scrambled eggs.
  3. When nearly set, remove the pan from the heat, check the seasoning and transfer the eggs onto serving dishes. Garnish with chives.
