Ćevapi is a grilled dish of minced meat in flatbread that's traditionally found in the countries of southeast Europe (the Balkans).

1tspBicarbonate of Soda

Method
PrehIn a bowl, combine the minced beef with the garlic, bicarbonate of soda, smoked paprika and salt and pepper. Once combined, transfer the mixture to a piping bag.
Prepare a tray lined with parchment paper and greased with oil.
Cut the tip of the piping bag to create a 2cm diameter. Press and pipe small meat sausages (about 5cm long). Drizzle with a little extra oil and cover with cling film, then place in the fridge to settle for 30 minutes minimum or overnight.
In the meantime, slice the tomatoes and onions and set aside.
Preheat the griddle pan to medium heat. Add the beef sausages and cook for about 6-8 minutes or about 2 minutes on each side until cooked through. Season well as they are being grilled.
Remove the sausages and warm the flatbread on the griddle, using the fat from the sausages to flavour the flatbread.
Serve warm in the flatbread, with a spoon of red pepper relish, tomato, onions and some sour cream.
