You can blitz a large amount of the coating together and store in an airtight container ready to use when needed, works well with prawns also and you can add whatever spices you like to the mixture depending how spicy your taste is!

Ingredients
1tspBlack Pepper
4 - Chicken Fillets
2tbspCoconut Oil
2cupsPorridge Oats
1tspSea Salt
1tbspSuperValu Chilli Flakes
1tspTurmeric
Method
Blitz the porridge oats and the flour in a food processor,add spices and stir through.
Cut each chicken fillet into 4 or 5 long strips.
Dip into melted coconut oil and roll in the oat/spice mixture.
Put on baking tray with a sheet of parchment paper and put into pre heated oven 200° for 20mins, then turn over and bake for another 20mins.
