If you’re struggling to get your kids to eat more veg, meatloaf
is an ideal way to sneak some into their diet. You can blitz raw or roasted veg in a blender and mix it in with the meat. The more raw veg you use the more liquid you’ll have at the end, so just make
sure to drain it all off.
1. Preheat the oven to 180°C/gas mark 4. Line a loaf tin with nonstick baking paper.
2. In a large bowl, combine the beef mince, breadcrumbs, egg, onion, carrot, celery, garlic, tomato purée, parsley, Worcestershire sauce and mustard and season well with salt
and pepper. Place in the lined loaf tin and smooth the surface.
3. Cover with foil and bake in the oven for 35 minutes, until cooked through. Remove from the oven and carefully drain off any excess liquid. Cool for at least 5 minutes before
slicing.
4. Serve with mushroom sauce or ploughman’s chutney. Sliced
meatloaf is also delicious in a sandwich for lunch, sort of like a rough pâté.
