Method:
Fill a saucepan with water and a generous pinch of salt and bring to the boil, reducing to simmer once boiled.
Add your spaghetti and cook as per the instructions on the pack.
Peel and finely slice the red onion and garlic. Slice the mushrooms.
Heat a non-stick pan on high heat, and once hot, add 1 tbsp of olive oil.
Add the sliced onions and fry for 3-4 minutes. Stir regularly until the onions turn golden and lightly brown around the edges.
Add the garlic to the onions and cook for 1-2 minutes until it begins to turn golden, stirring regularly to avoid burning.
Add the sliced mushrooms and a pinch of salt. Reduce the heat to medium and cook for 5 minutes again, stirring regularly.
Open and add the jar of Lovely Lentil Bolognese and mix well through the mushroom and onion mixture.
Drain your spaghetti pasta and give it a rinse to stop it from sticking together.
Add your cooked spaghetti pasta to the lentil bolognese and mix it through to start to bring your dish together.
As a nice optional garnish, break apart the basil leaves and add them to the plates as you are serving the dish.
