Place the crème fraîche in a bowl. Pour in the milk and whisk into the crème fraîche to slacken it to a yogurt
consistency. Whisk in the honey and vanilla extract, then stir in the chocolate chips.
Pour into ice pop moulds and place in the freezer. Insert the ice pop sticks or spoons after 30 minutes, when the
mixture is firm enough to hold them, and return to the freezer until solid.
