Method
Preheat the oven to the lowest possible temperature about 60˚C to 80˚C. Line a baking tray with parchment paper. In a food processor, place the ClemenGold® mandarin pieces, lemon juice, ClemenGold® mandarin zest, caster sugar and honey.
Pulse until completely smooth. Transfer the mixture to a saucepan over a medium heat and bring to simmer. Simmer for 5 to 8 minutes, whisking frequently until the mixture thickens slightly to a texture of an apple compote.
Remove from heat and spread on the prepared parchment, about 3mm thick and 5cm long (too thin will create shards and too thick will take too long to dry but both will still be delicious to eat.)
Place in the oven to dry out for 6 to 8 hours until it is not sticky anymore and peelable. When ready, remove from the oven and while it is still warm, peel it off and wrap the fruit peel on new parchment paper. Store in an airtight container.
