(to brush pan)
Method
Add the fresh fruit and maple syrup to a saucepan and simmer until fruit has softened for 4-5 minutes.
Whish the flour and eggs together to make to a smooth texture.
Add the milk and mix to a smooth finish.
Brush a non-stick frying pan with a little vegetable oil and place on a medium to high heat.
Pour some mixture into the pan and swirl around to cover the base.
Cook for 1 minute or so until edges begin to crisp.
Flip the pancake over and cook the other side. Once cooked place the pancake on a serving plate.
Add a little of the fruit coulis to half of the pancake and fold in half, and then into a quarter.
Serve with a dust of icing sugar and a drizzle of SuperValu Signature Range maple syrup.
