  • 2 - Eggs
  • 120 ml Milk
  • 100 g Mixed Berries (strawberries, raspberries, blueberries all halved)
  • 100 g SuperValu Plain Flour (or self raising)
  • 20 ml SuperValu Signature Tastes Maple Syrup
  • 1 drop Vegetable Oil (to brush pan)


  1. Add the fresh fruit and maple syrup to a saucepan and simmer until fruit has softened for 4-5 minutes.
  2. Whish the flour and eggs together to make to a smooth texture.
  3. Add the milk and mix to a smooth finish.
  4. Brush a non-stick frying pan with a little vegetable oil and place on a medium to high heat.
  5. Pour some mixture into the pan and swirl around to cover the base.
  6. Cook for 1 minute or so until edges begin to crisp.
  7. Flip the pancake over and cook the other side. Once cooked place the pancake on a serving plate.
  8. Add a little of the fruit coulis to half of the pancake and fold in half, and then into a quarter.
  9. Serve with a dust of icing sugar and a drizzle of SuperValu Signature Range maple syrup.
