Sarah's Fluffy Buttermilk Chocolate Chip Pancakes with Chocolate Sauce

Ingredients

  • 100 ml Buttermilk
  • 2 - Eggs (seperated)
  • 100 g SuperValu Plain Flour
  • 20 g SuperValu Signature Tastes 40% Cocoa Milk Chocolate Bar (cut into small pieces)
  • 50 g SuperValu Signature Tastes 40% Cocoa Milk Chocolate Bar
  • 1 drop Vegetable Oil (to brush the pan)

Chocolate Sauce:

  • 25 ml Milk

To Decorate:

  • 1 - Icing Sugar

Method

  1. To make the chocolate sauce, add the chocolate and milk to a saucepan and place on a medium heat.
  2. Whisk until the chocolate has melted, add a little more milk if required to create a smooth pouring consistency.
  3. To make the pancakes, separate the eggs, then in a bowl, whisk the egg whites until fluffy and resemble clouds, set aside.
  4. Add the flour and egg yolks to another bowl and mix together until smooth.
  5. Pour in the buttermilk and mix until combine.
  6. Finally, fold in the egg whites carefully to the mixture but do not over mix or you will lose air.
  7. Brush a non-stick frying pan with a little vegetable oil and place on a medium heat.
  8. Spoon 2 tbsp of the mixture onto the pan and cook for 1 min, then sprinkle a little chopped chocolate on top.
  9. Cook for 1 minute or so until edges begin to crisp. Flip pancake over and cook the other side.
  10. Serve with a dust of icing sugar and a drizzle of chocolate sauce.
