Carrot and Peanut Butter Bagels

This is a lovely crunchy option for lunch. Replace the peanut butter with a tasty Own Brand hummus for a nut-free version!

  • 2 large Carrots grated
  • 1 - Lemon juice only
  • 1 - Pepper
  • 1 - Salt
  • 2 - SuperValu Eggs hard-boiled, sliced
  • 4 - SuperValu Fresh Plain Bagels halved or toasted
  • 30 g SuperValu Rocket Leaves to serve, optional
  • 4 tbsp SuperValu Smooth Peanut Butter (2tbsp + 2tbsp)


  1. Lay the halved bagels on a flat work surface then spread with two tbsp of the peanut butter. 
  2. In a small bowl, combine the carrotsremaining peanut butter and lemon juice and a pinch of salt and pepper, if required.  
  3. Divide the grated carrot mixture on each bagel, add the sliced eggs, iceberg lettuce and the top of the bagel. Press down firmly. 
  4. Either serve immediately or wrap in parchment paper and refrigerate until required.
