Serve this banana oat bake with yoghurt, nut butter and mixed fruit for a delicious, guilt free breakfast.

1 - Banana
chopped
1tbspButter
melted, or melted coconut oil
3tbspFresh Blueberries
(optional)
2tspGround Cinnamon
1tbspHoney
200gJumbo Oats
400mlMilk
or almond milk
1pinchSalt
3tbspSuperValu Goodness Flaked Almonds
1tspVanilla Extract
To Serve
1bunchMixed Berries
2tbspNatural Yogurt
2tbspPeanut Butter
or any nut butter
Method
Preheat the oven to 200oC/gas mark 6.
Place the oats, milk, butter/coconut oil, honey, vanilla and a pinch of salt in a mixing bowl and stir well to combine. Transfer to a glass baking dish and sprinkle the cinnamon on top, then scatter over the chopped banana. Finish with the flaked almonds and blueberries, if using.
Bake in the oven for 25 minutes, until nicely browned. Top with mixed berries, nut butter or natural yogurt.
