Method:
- Preheat Oven to 200C, 180C fan, Gas 6. Line a 2lb loaf tin.
- Beat the butter and sugar together until pale and fluffy with a mixer.
- Add one egg at a time, beating between each.
- Mash the bananas well with a fork and add them to the mixing bowl along with the vanilla extract and mix to combine.
- Mix the flour, baking powder together and sieve into the mixture.
- Add the salt and mix everything well.
- Fold the chocolate chips into the mixture.
- Spoon the mixture into the lined loaf tin.
- Bake for 50 minutes, covering with foil after 30 minutes to prevent the top from burning.
- Rest on a wire rack to cool slightly before slicing.
Tip: Bake two loaves at the one time, this freezes and defrosts really well.
