Baked Monkfish with Cherry Tomatoes, Red Onion Baked Monkfish with Cherry Tomatoes, Red Onion

Ingredients

  • 1 handfull Black Olives to serve, optional
  • 100 g Cherry Tomatoes
  • 2 - Lemon
  • 500 g Monkfish skinned and boned
  • 75 ml Olive Oil
  • 1 portion Penne Pasta to serve, optional
  • 1 pinch Pepper
  • 1 - Red Onion sliced
  • 1 pinch Salt
  • 1 medium SuperValu Courgette slcied
  • 2 tbsp SuperValu Oregano

Method

  1. Preheat the oven to 200°C/gas mark 6. 
  2. Place the courgette, red onion and cherry tomatoes in a bowl. Slice one of the lemons and juice the other one, then add to the bowl along with the olive oil and oregano. Season with salt and pepper and mix well. 
  3. Place the ingredients on a large baking tray, top with the monkfish and bake for 20 minutes. Serve with penne pasta and scatter with halved black olives if you like.
