Toasted Baguettes with Lemon and Herb Turkey and Tomato Salsa


This fantastic recipe is quick and easy to prepare and is a great mid week treat.

Preparation time: 120 minutes

Cooking time: 20 minutes


Serves: 2 people

From the Store Cupboard:
  • 2 cloves SuperValu Garlic
    finely diced
  • 3 tbsp SuperValu Olive Oil
  • 0 - SuperValu Salt
From the Store Cupboard
  • 1 tsp Chilli Powder
  • 2 tsp Mayonnaise
  • 1 tsp SuperValu Dried Mixed Herbs
  • 1 tbsp SuperValu Olive Oil
Lemon & Herb Turkey
  • 1 - SuperValu Fresh Demi Baguette
  • 360 g SuperValu Quality Irish Turkey Steaks
Tomato Salsa
  • 1 - Red Onion
    finely diced
  • 0 - SuperValu Lemon
  • 3 - SuperValu Tomato


Lemon & Herb Turkey

  1. Cut each turkey steak into 2 long strips. Place the turkey steaks into a large mixing bowl with the oil, dried mixed herbs, chilli powder and lemon zest and mix well. Leave to marinate for 2-3 hours if possible.
  2. Heat a large pan and quickly cook the turkey steaks for 4-5 minutes each side until golden brown and cooked through to the centre.
  3. Slice the baguettes horizontally and place under the grill until lightly browned. Spread with a little mayonnaise and then neatly arrange the turkey strips on top and a generous spoon of the tomato salsa on top of that.

Tomato Salsa

  1. Very simply just mix everything together for the salsa in a small bowl.
  2. Season lightly with some salt and pepper and store in the fridge until required.
