Slow Cooked Pulled Pork Tacos

Save any leftovers for a delicious pulled pork sandwich… just add a dash of barbecue sauce when reheating.

Ingredients

  • 4 cloves Garlic chopped
  • 1 tbsp Jalapeno diced
  • 2 - Lime zest and juice
  • 2 - Onion diced
  • 1 - Pepper
  • 1 - Salt
  • 1 tsp SuperValu Cayenne Pepper
  • 2 tbsp SuperValu Mixed Herbs
  • 3 kg SuperValu Pork Roast cut into large chunks
  • 2 tbsp SuperValu Smoked Paprika
  • 2 tbsp Supervalu Ground Cumin
  • 200 ml Vegetable Stock

TO SERVE

  • 2 - SuperValu Avocado sliced
  • 100 g SuperValu Grated Cheddar Cheese
  • 100 g SuperValu Rocket Leaves chopped
  • 8 tsp SuperValu Sour Cream
  • 12 - Taco Shells
  • 100 g Tomato Salsa

Method

  1. In a frying pan, heat some oil and add the pork pieces. Sear and brown on all sides over medium heat.
  2. Transfer to the slow cooker and sprinkle with the cayenne pepper, cumin, smoked paprika and mixed herbs. Toss to coat.
  3. Add the onion, garlic, stock, jalapeno pepper, lime zest and juice. Season.
  4. Cook on a low heat for 8 - 9 hours or on a high heat for 4 - 5 hours.
  5. Pull the pork apart with two forks and stir to coat with the cooking juices.
  6. Serve hot with your favourite toppings in a taco shell.
