  1. Place the raspberries, icing sugar and lemon juice in a small pot and heat until the berries break down. Put into a blender and blitz until smooth. 
  2. Pass the purée through a fine-mesh sieve to remove the seeds and add a little more sugar if needed. Add a little water if the sauce is too thick.
