SuperValu Pea Bruschetta


This dish serves 2 people as a starter or makes 8 to 10 canape size bruschettas.

Preparation time: 15 minutes

Cooking time: 10 minutes


Serves: 2 people

  • 1 pinch Caster Sugar
  • 1 clove Garlic
    cut in half
  • 1 - Lemon
    zest and juice of half only
  • 1 tbsp Olive Oil
  • 1 pinch Pepper
  • 1 pinch Salt
  • 1 portion SuperValu Feta Cheese
  • 1 - SuperValu Fresh Demi Baguette
    or ciabatta, sliced
  • 1 portion SuperValu Fresh Dill
  • 100 g SuperValu Fresh Peas


  1. Cook the peas for 3 to 4 minutes in boiling salted water, then drain and rinse under cold water.
  2. Toast the bread on a hot, dry griddle pan, making nice crispy markings. Rub the halved garlic clove over the dry bread.
  3. Tip the peas into a bowl and roughly mash with the lemon zest, a small squeeze of lemon juice and the olive oil. Add some chopped fresh dill and season with salt and pepper and a little sugar, which will really bring out the sweetness in the peas. Taste and adjust the seasoning as necessary, including a little extra lemon juice if needed.
  4. Top the toasted bread with the mashed peas. Sprinkle with some crumbled feta and garnish with a sprig of dill.
