Try this recipe with some crumbled feta cheese.

8 - Cherry Tomatoes
3 - Corn on the Cob
(cooked and corn kernels removed and retained)
0 - Red Onion
(1/2 of the onion, very thinly sliced)
1 tbsp Red Wine Vinegar
100 ml SuperValu Extra Virgin Olive Oil
6 - SuperValu Radishes
0 - SuperValu Rocket Leaves
0 - SuperValu Salt
1 tbsp SuperValu White Wine Vinegar
- Combine the shallot, white wine and sherry vinegar in a bowl and season with some salt and pepper. Allow to macerate for 15-20 minutes. Whisk in the oil and add more seasoning if required.
- Place the corn kernels into a bowl and pour over some of the vinaigrette. Add the tomatoes, radish, red onion and rocket and toss gently with the corn. Drizzle with the remaining vinaigrette and serve.
- Crumbled Feta cheese makes a wonderful addition to this salad if desired.
