This bread can be used as a pre-training snack or even for recovery with a large glass of milk.
Preparation time: 10 minutes•
Cooking time: 50 minutes
Serves: 4 people
*This recipe makes 1 loaf
1. Preheat the oven to 180°C/gas mark 4. Line a loaf tin with
non-stick baking paper.
2. Blend the eggs, bananas, blueberries, coconut oil and honey
together. Mix all the other ingredients together in a large bowl, then pour the wet mixture on top of the dry ingredients and mix well.
3. Transfer the batter to the lined loaf tin and bake in the oven for 50 minutes. Allow to cool on a wire rack, then cut into slices and serve.
Tip: You can add more honey and dried fruit if you would like a sweeter version of this bread.
