Operation Transformation Recipe

Ingredients

Serves: 2 people

  • 1 - Lemon
    zest, grated
  • 4 tsp Rapeseed Oil
  • 4 tbsp SuperValu Fresh Breadcrumbs
    (60g)
  • 2 tsp SuperValu Fresh Parsley Flat Leaf
    chopped
  • 2 tsp SuperValu Fresh Thyme
  • 60 g SuperValu Goats Cheese
    crumbed
  • 800 g Tomatoes
    large
OT Side Salad
  • 1 - Carrots
    grated
  • 0.25 - Cucumber
    sliced
  • 60 g SuperValu Baby Spinach

Method

  1. Preheat oven to 220C.
  2. Slice the tops off the tomatoes and a small slice from the bottoms. Scoop out the seeds.
  3. Put tomatoes on a baking tray and drizzle with 1 teaspoon of oil.
  4. In a bowl combine breadcrumbs, remaining oil, thyme, parsley, lemon zest and goats cheese.
  5. Fill tomatoes with the breadcrumb mixture and put the top of the tomato back on.
  6. Bake in oven for 15 mins.
  7. Make your side salad by mixing baby spinach, grated carrot and cucumber in a large bowl.
  8. Serve the side salad with the baked tomatoes.
