Place the olive oil and garlic in a bowl and add the bacon chops, ensuring they are covered in the flavoured oil. Set aside to marinade for at least half an hour.
Next prepare the baby potatoes. Place the potatoes in a large pan of salted water and bring to the boil. Simmer for 20 minutes until softened. Remove from the heat and using the back of a fork crush gently. Sprinkle with some fresh herbs.
In the meantime, heat a large pan or griddle pan over a high heat and add the bacon chops, cook for 4 - 6 minutes on each side depending on thickness.
Divide the potatoes between the serving plates and place a bacon chop onto each plate, serve immediately with a spoonful of apple chutney.
