Make your own crackers by slicing day old bread. They will cook in the oven in 7-8 minutes at 180˚C.

0.5 pack Baguette slices
1 bunch Chives
1 pack Crackers
2 tbsp Cream Cheese
1 tbsp Creme Fraiche
1 tbsp Goats Cheese
1 medium Lemon
zest and juice
1 tbsp Olive Oil
1 pack Peppered Smoked Mackerel
1 pinch Salt and Pepper
- If you want to make your own crackers, thinly slice day old bread. Place on a baking tray, sprinkle with olive oil and sea salt and bake in the oven at 180˚C for 5 minutes.
- In a bowl, break the mackerel into pieces. Add the crème fraiche, the cream cheese, the goat's cheese and crush with a fork until soften. Check the seasoning.
- Spoon the mackerel pate on the crackers. Zest the lemon over the crostini and drizzle some lemon juice over.
- Just before serving, sprinkle a few chives over the crostini. Serve immediately.
