Make the reliable family favourite healthier with this recipe, which uses ground almonds for coating. 

Preparation time: 10 minutes

Cooking time: 20 minutes


Serves: 2 people

  • 1 pinch Black Pepper
  • 2 - Chicken Fillets
    sliced in half lengthways
  • 1 - Eggs
  • 2 tbsp Milk
    or almond milk
  • 1 tsp Paprika
  • 1 pinch Salt
  • 80 g SuperValu Ground Almonds
For Frying
  • 1 drop Coconut Oil
    or rapeseed oil
To Serve
  • 0.5 - Cucumber
    for green salad
  • 1 handfull Spinach
    for green salad
  • 1 handfull SuperValu Iceberg Lettuce
    for green salad
  • 4 tbsp Sweet Chilli Sauce
    for dipping


  1. Whisk the egg and milk together in a shallow bowl. Combine the ground almonds, paprika and seasoning in a second shallow bowl.
  2. Dip a chicken strip into the egg mixture, shaking off any excess, then transfer to the ground almonds and coat generously. Set aside and repeat for the remaining strips.
  3. Heat a little coconut oil in a frying pan set over a high heat. Add the chicken strips and fry for 2 to 3 minutes on each side, then turn the heat down to medium and continue to cook for about 10 minutes, turning regularly, until the chicken is cooked through.
  4. Serve with a green salad and a small bowl of sweet chilli sauce on the side for dipping.
