Air Fryer Hash-Browns & Fried Eggs

If your air fryer don’t have non-stick bowl and basket, use some parchment paper to fit the base, ensuring the paper is not overly loose to avoid catching on fire with the heating element!

Add some red pesto just before adding the eggs in the air fryer base to add extra flavour.

Ingredients

  • 3 handfull Baby Greens
  • 1 tbsp Corn Flour
  • 1 clove Garlic (chopped)
  • 1 - Onion (finely chopped)
  • 4 - Potato (peeled)
  • 1 pinch Salt and Pepper
  • 3 - Spray Oil
  • 4 - SuperValu Egg
  • 1 tsp Thyme

Method

  1. Grate the potatoes and place in a bowl of water to remove excess starch. This will allow the potato to cook and colour better in the air fryer.
  2. Squeeze the potato in your hands or use a clean tea or dish towel to remove excess liquid.
  3. Place the potato in a bowl and add thyme, onion, garlic, corn flour and season with some salt and black pepper.
  4. Combine and shape into 4 patties.
  5. Place them in the basket of the air fryer, spray them with some oil and cook for 6-8 minutes.
  6. Then flip them and continue to air fry for a further 5 minutes or so until the edges are crispy and the centre still lightly softer.
  7. Check the cooking after 10 minutes as all machines are different.
  8. Once cooked, remove and keep warm aside.
  9. Remove the basket and keep the bowl in the air fryer, add 2 -3 squeeze of oil spray and crack the 4 eggs in the base. Close the air fryer and cook for 3 minutes until cooked to your liking.
  10. Lift the egg onto the hash potato pieces and serve immediately with some salad leaves and a sprinkle of coriander.
  11. Enjoy while hot!
