Instead of regular starchy potato mash, why not try a lower-carbohydrate alternative that is super filling and goes with any meat dish?
1. Steam the cauliflower and broccoli florets for 8 to 12 minutes, until soft enough to mash. Transfer to a large bowl. Using a hand blender or a food processor, blend to a coarse or smooth consistency, whichever you prefer.
2. Add the peas, spinach and butter and blend again until fully combined. Season with a pinch of salt and pepper and serve as a side to any meat dish.
Tip: You can also add carrots and butternut squash to the mix for more ‘bite’ in your veggie mash.
