This quick and easy Potato and Leek soup is a classic and full of flavour.

Ingredients

600gLeek
washed and chopped into bite-sized pieces
250gOnion
chopped
1pinchPepper
600gPotato
washed and chopped into bite-sized pieces
1tspSalt
1pinchSalt
2tbspSuperValu Oil
2LVegetable Stock
Method
Heat the oil in a large pot set over a medium-high heat. Add the onion and garlic and fry for 2 minutes, until browned. Add the leek and salt and fry for a further 2 minutes. Add the potatoes and vegetable stock and bring to the boil, then taste and season with salt and pepper. Reduce the heat and simmer for 15 minutes. Take the pot off the heat and blend the soup with a hand-held blender. Serve hot.
