This quick and easy recipe can be prepared and cooked in minutes and is packed full of flavour.

  • 1 pack Cherry Tomatoes halved or quartered
  • 400 g Chickpeas drained and rinsed
  • 400 g Chopped Tomatoes
  • 400 ml Coconut Milk
  • 2 tsp Curry Powder
  • 3 cloves Garlic chopped
  • 2 tsp Ground Coriander
  • 2 tsp Ground Cumin
  • 1 tsp Ground Ginger
  • 400 g Lentils green, drained and rinsed
  • 250 g Onion chopped
  • 4 - Spring Onions chopped
  • 2 tbsp SuperValu Oil
  • 4 - SuperValu Pitta Bread toasted


  1. Heat the oil in a large pot set over a medium-high heat. Add the onion and garlic and fry for 2 minutes, until browned. Add the spring onions and cherry tomatoes and cook for a further 2 minutes. Add the lentils, chickpeas, chopped tomatoes, coconut milk and spices and stir it all together. Bring to the boil, then reduce the heat and simmer for 5 minutes. Serve hot and with toasted wholemeal pittas.
