400gChickpeas
drained and rinsed
400gChopped Tomatoes
400mlCoconut Milk
2tspCurry Powder
3clovesGarlic

green, drained and rinsed

Method
Heat the oil in a large pot set over a medium-high heat. Add the onion and garlic and fry for 2 minutes, until browned. Add the spring onions and cherry tomatoes and cook for a further 2 minutes. Add the lentils, chickpeas, chopped tomatoes, coconut milk and spices and stir it all together. Bring to the boil, then reduce the heat and simmer for 5 minutes. Serve hot and with toasted wholemeal pittas.
