This mocktail can easily be converted to a fabulous spiced martini. Chill the mix, then when serving, add a shot of gin with an apple and lemon garnish. The lemon means you know which is the grown-up one!

4 - Black Peppercorns
2 - Cloves
12 - Juniper Berries
Heat all the spices in a large saucepan for 3 to 5 minutes, until they begin to caramelise. Pour the apple juice into the pan along with the rose water. Add the water, honey and saff ron, then bring to a gentle simmer for 10 minutes.
Using a tea strainer, strain the punch into mugs or glasses and add apple slices to decorate.
