Get more veg in your diet by swapping the usual mountain of carbs for tasty treats like cauliflower.
*This recipe serves 4 to 6.
1. Preheat the oven to 180°C/ gas mark 4. Line a baking sheet with non-stick baking paper.
2. Place the cauliflower on the lined sheet.
3. In a small bowl, whisk together the olive oil, garlic and thyme until evenly combined. Drizzle this over the cauliflower, season with salt and pepper and toss to evenly coat. Place in the oven and cook for 20 minutes, tossing halfway through, until tender.
4. Sprinkle with the Parmesan and cook for a further 5 minutes, until golden. Transfer to a serving platter and garnish with a few thyme sprigs.
