Method
Prepare the three stuffings separately and set side until required.
Preheat the oven to 180°C/gas mark 4.
Line a Bundt tin with the streaky bacon overhanging the edges, then add a layer of turkey escallops to cover the base and sides of the tin. Add a layer of each stuffing, one by one, starting with the cranberries and chilli, then the sage and onion, and lastly the apricot stuffing.
To finish, cover with another layer of turkey escallops, fold over the streaky bacon and compress to tighten.
Cover the tin with foil, place it in the oven and roast for 45 minutes, until cooked through. Remove from the oven and leave to set for 10 minutes before inverting onto a serving platter and garnishing with fresh rosemary. Serve immediately with Brussels sprouts and extra stuffings.
