Horchata is a traditional central American rice drink that's fragrant and creamy without containing any dairy. It's a refreshing summer drink too.

150gAlmonds
blanched
50gCaster Sugar
2tspCinnamon
4 - Cinnamon Stick
to decorate
10 - Ice Cubes

450gSuperValu Easy Cook Long Grain Rice

Method
Rinse the rice well under a cold running tap. Drain and place it in a large bowl, cover with the water and soak for at least 2 hours, but preferably overnight.
The next day, drain the rice, but reserve 600ml of the soaking water. Using a food processor or blender, grind the rice as finely as possible.
Add the almonds to the rice and continue processing until they are finely ground too. Add the sugar, lime zest, ground cinnamon and soaking water and blend until the sugar has dissolved. After all the ingredients have been blended together, strain through a fine mesh sieve.
Serve in tall glasses with ice cubes and a cinnamon stick for decoration. This is magical with cold cereals but not hot porridge, as it will thicken too much.
