This refreshing, no cook soup requires very few ingredients and is perfect for summer.

1 - Cucumber
peeled and chopped
1tbspLemon
juice
1dropOlive Oil
0.5tspSalt
750mlSuperValu Buttermilk
1bunchSuperValu Fresh Dill
to garnish
75mlSuperValu Sour Cream
1pinchWhite Pepper
Method
Make 6 frozen olive oil cubes by pouring the oil into an ice cube tray and freezing overnight.
Blend the cucumber, buttermilk, sour cream, lemon juice, sugar, salt and white pepper until smooth in a blender. Cover and refrigerate for about 1 hour, until cold.
Pour the soup into bowls. Add an olive oil ice cube to each bowl.
