RECIPE OVERVIEW

This egg-free mayo tastes just like the real thing! Plus it’s easy to make and makes most things taste great, especially burgers or any sandwich.

Ingredients

Serves: 4 people

  • 0.25 tsp Black Pepper
  • 1 tbsp Dijon Mustard
  • 2 cloves Garlic
    unpeeled
  • 2 tbsp Lemon Juice
  • 300 ml Olive Oil
  • 0.5 tsp Salt
  • 300 ml Soy Milk

Method

  1. Preheat the oven to 180°C/gas mark 4.
  2. Put the unpeeled garlic cloves on a small baking tray and roast in the oven for 10 minutes, until soft.
  3. Put the soy milk, lemon juice, mustard, salt and pepper in a blender or food processor, then squeeze the roasted garlic out of its skin and add that too. Blend for 1 minute. With the motor running, slowly add the oil and keep blending until it emulsifies into a mayonnaise-like consistency.
  4. Store in a jar in the fridge for up to two weeks.
