This egg-free mayo tastes just like the real thing! Plus it’s easy to make and makes most things taste great, especially burgers or any sandwich.

Preheat the oven to 180°C/gas mark 4.
Put the unpeeled garlic cloves on a small baking tray and roast in the oven for 10 minutes, until soft.
Put the soy milk, lemon juice, mustard, salt and pepper in a blender or food processor, then squeeze the roasted garlic out of its skin and add that too. Blend for 1 minute. With the motor running, slowly add the oil and keep blending until it emulsifies into a mayonnaise-like consistency.
